Banana Pancakes from Barefoot Contessa

I think it was during my Girls Weekend that someone recommended these pancakes. I printed out the recipe and made them this morning. They are delicious! I wanted to share for those who like Banana Pancakes! Here you go:

1 1/2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup sour cream
3/4 cup plus1 tablespoon milk
2 extra-large eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
Unsalted butter
2 ripe bananas, diced, plus extra for serving
Pure maple syrup

In a medium bowl, sift together the flour, sugar, baking powder, and salt. Whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined. Melt 1 tablespoon of butter in a large skillet over medium-low heat until it bubbles. Ladle the pancake batter into the pan. Distribute a rounded tablespoon of bananas on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute, until browned. Wipe out the pan with a paper towel, add more butter to the pan, and continue cooking pancakes until all the batter is used. Serve with sliced bananas, butter, and maple syrup.

Flashback Friday

This isn't flashing back very far but it is the only thing I have on my computer for now. This is my birthday in 2006 with Amy, Stephanie and Ronna. We had dinner at Maggiano's and then they brought out a cake that they bought for me with a picture of Mike Modano on it!! Great friends! Amy and Ronna were both pregnant with Campbell and Blaine at the time and now the boys are over 3 years old! Time flies!

Cuts For A Cause

I wanted to let everyone know about a good benefit happening on Sunday, August 30th. It is Cuts for a Cause at Salon Opus in Addison. All donations go to the Yellow Ribbon Fund (www.yellowribbonfund.com). My stylist is putting this on so if you can make a donation or go get a $15 haircut, that would be awesome! Please see details below.

Change

Do you ever feel like you need a change? In any aspect of life, maybe physical, maybe with your job or maybe something material (like a new car). Anyway, I didn't need a new car but I needed a 'change'. I used to think that going to get my hair colored/cut meant that I was going to have a new appearance. Once I started working (got a real job) I realized that I probably didn't need to always change my hairstyle and have a new appearance. So for the last couple of years I've had the same haircolor and basically the same cut but I've been thinking that I needed to do something different:) Don't hold your breath for something drastic.......I just got bangs! But they are different and change my appearance just enough that I feel I have that little 'change' I was looking for. As well as bangs I decided to get fake nails. I haven't had fake nails in years but I was wanting a change from my normal short nails (although I will go back to those). I like my fake nails, they are just long enough and something different that I was looking for. I'm rambling but thought I would blog about my 'changes'. So here is to Bangs and Fake Nails.....and all of the other 'changes' that we are looking for.

Home Sweet Home

Lee is home!! He got home Friday evening and it has been wonderful ever since! We had a great weekend together and he will pick up today where he left off with the Cats. He should pitch for them on Thursday.

We went to see Transformers last night and it was ok, I didn't like it as much as the first one.

Here is my sign I made for Lee (sometimes referred to as Wee). I got a good laugh out of him when he saw it so it was worth it.

Girls Weekend

These are some pictures of our Girl's Weekend at the Gaylord! We had such a good time....pool, vegging and then alot of dancing to a great 80's band on Saturday night!

I didn't get many pool pictures but here is one of Amy and Ronna looking fabulous poolside.

This is what took place after the pool/before dinner and dancing:) We needed a rest.

Random picture with the longhorn in the background.

This was at dinner. We all needed some energy, we were just blah from the day in the sun.

This is outside at Glass Cactus, I like Stephanie's pose in this picture.

And then Ronna's pose in this picture.

Hilarious.

Even funnier!! At this point the energy came to us and we were dancing so much!

I like that I was trying to make a 'sexy' face but it turns out I just look like I ate something bad!

I am the only one smiling, lol.

Cancun

I have posted alot of pictures from my trip to see Lee. I had a great time! It was so good to see his face and just be right beside him (it had been 6 weeks since I last saw him)!! The pictures are in order, so here goes:

I got there Friday afternoon and Lee was pitching that night. I got a couple of good pictures but not as many as I wanted.

This is after the game. It was really hot and humid that night, so I drank beer to hydrate myself:)

Saturday morning we got up and had breakfast. Then we went shopping at this really nice mall. Lee wouldn't take a picture with Spider Man so I did:)

This is at the game Saturday night, I just got a couple of good pictures of the field.

The two guys up to bat are Raul and Pedro, both from Puerto Rico. They speak English and have been really great to Lee.

This is Chacho, the maskot for Cancun. He was actually hilarious and got kicked out of the game on Sunday night for making certain moves behind the 3rd base umpires back.
This was Sunday, we were on our way to the pool at the hotel.

Sunday night at dinner, Lee and Raul.

Raul and his wife, Megan.
You know who.

We had fun Sunday night.

Our ferry to Isla Mujeras (an island off of Cancun) on Monday.

Coconuts that Megan and Raul bought.

And then they were slaughtered, look at that knife!!

The beach.

Lee and Shaggy (another guy from the team).

Lee and I waiting for the ferry back to Cancun.

Raul and Lee at the beach.

It was gorgeous!

The water was so nice.

Rundown of the Weekend

How nice a 3 day weekend is! Thursday started off with Lee pitching that evening and doing really well! Once the 3rd inning started the game was delayed because of rain! After about an hour, they called the game. Meredith came up Thursday night to stay the weekend with me. Friday we went to the pool for a while and then did a little shopping before going to see My Sister's Keeper. I read the book a while back and, although it is very sad, it was a great book! The movie was really good but they changed the ending and I like the ending in the book better. Meredith has been sick (just a bad cold) so we took it easy on Saturday. We went to the Ft. Worth Zoo as soon as it opened (to avoid the crowd a little). And we saw so many of the animals, they were all out before it got too hot! I love the zoo and Lee loves that I found someone else to go to the zoo with me:) It did get hot though so we left and headed home to just veg. We went to dinner with Miriam Saturday night and watched fireworks. That same evening my Mom and Dad spent in the ER. Turns out my Dad has pneumonia. He had really high fever and was having trouble breathing but after several hours in the ER they let him go home. He got a shot of steroids and antibiotics. He is home for most of the week to let his body rest. Meredith went home yesterday so now it is back to just me.

I guess that is it for now. Just 4 more days.........till Cancun!!
